Our unique fermentation process

BREW TEA

We use fresh, clean water and the finest, organic tea and a pinch of cane sugar to give life to give the best possible start to our product. Once the tea cools down, we add a slice of our very own SCOBY to kick start the fermentation process.

FERMENTATION

The brewed tea is set into a clean vessel, covered and left to ferment. After  7-10 days, the SCOBY will grow in size and impart its characteristic flavor and the kombucha is ready to be tasted and adjusted for flavor.

ENHANCE FLAVOR

At this stage, a slice is taken off the SCOBY and set aside for other uses. Flavors derived from organic fruit - most from our own farm - have now been added. The drink is now refrigerated for a few days to allow the final taste to fully develop, then sieved and bottled in our sanitary facility.

At Wild Apple, we want evey bottle we produce to deliver a fresh and satisfying experience for our customers. To ensure the production of the highest quality product, we maintain strict hygiene protocols in our sanity facility, and have completed certification course in safe brewing practices, and require our staff to complete state-regulation training in safe food handling practices.
